Ingredients

•350g Pork mince

•4 x Pork cutlets (approx. 300g each)

•5g fresh chopped Sage

•50g grated Parmesan cheese
Method

1.French and remove bone from the cutlet.

2.Butterfly and flatten the cutlet to make a schnitzel.

3.Mix the sage, mince and parmesan cheese together.

4.Place 100g of the mince mixture into the centre of the schnitzel and roll up.

5.Secure by placing 2 chicken loops around the meat.

6.Insert the loin bone back inside the rolled schnitzel.

7.Decorate with lemon wedges.
