Deconstructed Pork Cutlets

Ingredients

  • 350g Pork mince
  • 4 x Pork cutlets (approx. 300g each)
  • 5g fresh chopped Sage
  • 50g grated Parmesan cheese

Method

  1. 1.
    French and remove bone from the cutlet.
  2. 2.
    Butterfly and flatten the cutlet to make a schnitzel.
  3. 3.
    Mix the sage, mince and parmesan cheese together.
  4. 4.
    Place 100g of the mince mixture into the centre of the schnitzel and roll up.
  5. 5.
    Secure by placing 2 chicken loops around the meat.
  6. 6.
    Insert the loin bone back inside the rolled schnitzel.
  7. 7.
    Decorate with lemon wedges.
