Maple, Bacon and Apple Pork Sausages

This recipe could easily be made into thick or thin sausages, the thinner casings would create a product that is more kid friendly.

  • Lager mixing tub

Ingredients

  • 8kg pork trim
  • 2kg pork back fat
  • 1kg pork sausage meal
  • 250ml water
  • 750g maple syrup
  • 750g diced bacon, fried – optional
  • 1 x 800g can pie apple, roughly chopped

Method

  1. 1.
    Mince pork and back fat through a 10mm plate into a tub.
  2. 2.
    Add the sausage meal, water and maple syrup to the mince and mix well.
  3. 3.
    Mince the sausage mix through 5mm plate back into the tub.
  4. 4.
    Once minced add the fried bacon and apple to the sausage mince and mix well to evenly distribute through the mince.
  5. 5.
    The mince is now ready to fill out in sausage skins of choice.
