Slow cooker chilli con carne

Ingredients

  • 1 boneless pork shoulder, hock, scotch and skin removed
  • 1 onion, finely diced
  • 2 tbsp tomato paste
  • 1 x 400g can kidney or butter beans, drained
  • 1 dried chipotle chilli, stem and seeds removed (optional)
  • 1½ tsp chilli powder
  • 3 tsp ground cumin
  • 3 tsp ground coriander
  • 3 tsp smoked paprika
  • 3 tsp dried oregano
  • 2 tsp salt
  • 1 tsp cracked black pepper

Method

  1. 1.
    Remove any excess external fat from the shoulder. Cut shoulder into two even halves. Butterfly out each half ready for rolling.
  2. 2.
    Combine all spice rub ingredients in a bowl.
  3. 3.
    Sprinkle half of spice rub over inside of pork pieces.
  4. 4.
    In a separate bowl, combine onion, tomato paste and beans. Spread evenly over each pork piece, leaving a 2cm border all the way around. If using chipotle chilli, lay on top of pork in the middle.
  5. 5.
    Roll pork up into roast and tie, making sure filling is all contained.
  6. 6.
    Sprinkle remaining spice rub over each roast.
  7. 7.
    Sell ready to put in slow cooker.

General Information

Butchers tip: sell canned tomatoes and beans ready for the customer to take home and cook.

 

Cooking Instructions 

  1. Place 1 x 400g can diced tomatoes and 1 cup water or stock in slow cooker. Place pork on top. Extra beans can be added if required.

  2. Cook on HIGH 5-6 hours or LOW 8-10 hours, until meat is tender and falls apart.

  3. Remove strings and shred pork with a fork.

  4. Slowly simmer remaining sauce to thicken.
