Sticky BBQ pork ribs

Ingredients

  • 2kg pork spare ribs (3-4 racks)

BBQ Marinade

  • ¾ cup BBQ sauce
  • ¼ cup tomato sauce
  • 1 tablespoon paprika
  • 1 tablespoon dijon mustard
  • 2 tablespoon brown sugar
  • 1 tablespoon white vinegar
  • 2 teaspoons garlic powder

Method

  1. 1.
    Combine marinade ingredients in a large bowl and place the ribs in the marinade and refrigerate.
  2. 2.
    Pack in a foil tray or cryovac bag with enough marinade for your customers to baste the ribs during cooking.

General Information

Customer Cooking Instructions:

  1. Preheat the oven to 160 degrees celsius.

  2. Remove the ribs from the packing and place them on a roasting pan along with ¼ cup of water. Keep the marinade to the side to baste during cooking.

  3. Cover the roasting pan with foil and bake for 1.5 hours until ribs are tender.

  4. Turn the oven up to 180 degrees celsius and remove the foil.

  5. Cook for a further 30 minutes, basting every 10 minutes with the leftover marinade.


Suggestion: Serve with potato salad, gerkins and corn cobs.
